How long have you lived in Spokane?

I originally moved with my family from southern CA to Post Falls in 1994, and lived there until I graduated High School in 99. I moved to Portland after High School to attend Culinary School, and stayed in Portland until 2014, when I made the move back to Spokane.

What do you like best about Spokane?

I love the pace, I think Spokane offers a lot of the same great stuff as larger cities, but with a lot more of a laid back pace. I love being so close to nature, and I really love having all of the seasons.

Tell us about the local business you founded.

We opened in March of 2018. Our goal has always been to apply the same techniques, quality of product and service that we learned doing years of fine dining to a much more casual and approachable taco shop.

How can we as a community can support Cochinito?

Just keep coming. Spread the word and support us and all of the other great local restaurants. All of those positive online reviews really help to draw in new faces. Restaurants are all up against it right now, recovering from the pandemic, busier than we have ever been and having a really hard time finding both staff and product. Positive vibes and happy guests help make it all worth it.
